Trải Nghiệm Hương Vị Độc Đáo của Món Cá Lồi Xối Mỡ ở Phan Thiết
Cá lồi xối mỡ là một trong những đặc sản được nhiều người yêu thích khi đi Phan Thiết. Thịt cá mềm và ngọt thơm, ăn kèm các loại rau sống và bánh tráng chấm nước mắm chua ngọt chắc chắn sẽ hấp dẫn những người khó tính nhất. Cá lồi là loài cá có lớp da trơn bóng, nhìn sơ qua thì khá giống cá đuối. Vì chỉ sống chủ yếu ở các vùng biển miền Trung nên nó trở thành món đặc sản nơi đây. Để có một dĩa cá lồi xối mỡ ngon, người ta chọn con cá khoảng 1-2 ký (thường thì loại cá này có thể lên đến 5 ký). Thịt cá nhỏ sẽ ngọt hơn và lớp sụn bên trong vẫn sẽ còn mềm. Cá được chà lớp nhớt bên ngoài bằng lá rồi sơ chế sạch sẽ nên sẽ không có mùi tanh khi ăn.

Để ăn món này tròn vị nhất thì không nên chọn loại bánh tráng quá mặn hoặc quá ngọt, vì thịt cá đã ngọt mà nước chấm cũng được pha theo đúng khẩu vị rồi. Bánh tráng dày quá khi ăn sẽ khó khăn còn mỏng quá thì lại không có cảm giác. Nói chung để có một bữa ăn ngon, người đầu bếp ở đây cũng phải lựa chọn rất chi tiết.
Nước mắm ăn chung với cá lồi xối mỡ thường là mắm pha chua ngọt hoặc nước mắm me tùy theo sở thích của bạn. Ăn với nước mắm chua ngọt, bạn sẽ thấy sự hài hòa giữa vị ngọt của cá, vịt chua của nước cốt chanh, mằn mặn của nước mắm xứ biển, cay cay của ớt giã nhỏ và đủ thứ mùi vị khác nhau cùng độ thanh mát của các loại rau. Một số người còn có sở thích đánh nhuyễn miếng gan của cá vào nước chấm để tăng vị béo. Tất cả hòa quyện với nhau rất nhẹ nhàng.
Nước mắm me thì đặc biệt hơn vì vị chua chua của me thật đậm đà, vị ngòn ngọt khi được pha thêm đường, cùng chút ớt cay cay “đã miệng”, ăn với loại này thì có thể ăn mãi mà không thấy ngán, càng ăn càng thèm, xuýt xoa mãi không thôi. Đâu đó thoang thoảng còn có mùi thơm mỡ hành rất hấp dẫn.
